Overview
These two tenant improvement projects were simultaneously designed and executed with two distinct approaches, as the small entrepreneur team and chef Anisha Garcia sought diversification in their development and launch strategy. Together, we lead a quick and dirty fast-track project in the Lower East Side in parallel with a larger, more comprehensively planned investment in the West Village. Both spaces, being remarkably small, required a detailed space-planning effort to establish the workflow, equipment inventory, and capacity.

The design started with a programming and operations analysis. After itemizing the equipment, we defined the optimal workflow for cooking, food preparation, and customer experience.





We also guided the team in the development of the brand environment and signage, prioritizing a design that promoted cleanliness and accessibility. The materials and colors used are inspired by Mexican culture but remain contemporary and unique to their use.

The restaurant was astoundingly successful, emphatically reported by bloggers and mainstream publishers.
